Varietal Notes: 50% Grillo, 50% Insolia
Vineyard: Sourced from estate vineyards in Fontane and Bastonaca in the Vittoria region.
Orientation: 230 meters in elevation. Flat exposition.
Soil : Red soil of medium consistency; made up of subalpine sands composed of limestone and silica.
Viticulture: Hand-harvested. Vines average 12 years of age.
Vinification: Spontaneous fermentation in concrete tanks on the skins with indigenous yeast. Five to seven days of skin contact.
Aging: Aged in concrete vats for eight months followed by three months in the bottle before release.
Notes
Rami was originally called Ramingallo which is the name of an area near Agrigento, Sicily. The wine has no connection to that area other than that Giusto and Giambattiasta liked the name Ramingallo! Gallo had an issue with their having "gallo" in the name and so they had to change the name to just Rami.
