The Rocha family has been producing cachaça in Brazil since 1902 using sugarcane harvested from their own fields. Their cachaça is produced using a biodynamic process where they exclude the use of artificial chemicals on the soil and plants. The sugarcane is ground manually, fermented with indigenous yeasts, and then distilled into a spirit showing a faint cane sweetness balanced by peppery spirit spice.
