Alipús works with small distillers throughout Oaxaca to showcase the signature mezcal styles of the pueblos. Fermented in pine vats and distilled by Don Eduardo Hernandez from agave Espadín grown at about 5,200 feet in mountainous, white, and very rocky soil. Soft and lightly fruity.
