Biodynamic since 1999, he only uses indigenous yeasts and neutral oak or clay amphora vessels in the cellar. He eschewed the use of S02 starting in 2006 and believes this change allows the purity of the fruit to shine through. This Chardonnay showcases lemon curd, exotic fruits, and an undercurrent of spices.
