Vineyard: from 10 villages in the Côteaux Sud d’Epernay, Vallée de la Marne and Montagne de Reims; avg 30-year-old vines; clay-limestone soils with marnes, chalky sub-soils.

Viticulture: Farmed in a sustainable manner and influenced by ecological methods with a strong emphasis on biodiverstiy.
Vinification: Grapes are picked by hand when fully ripe, and traditionally pressed. Alcoholic fermentation in foudres and barrels with regular stirring of the lees, partial malolactic fermentation. Aged sur lie for 7 months before bottling. 50% reserve wines aged in concrete tanks. no filtration.
Aging: 20 to 30 months sur lattes; Dosage 4 g/L; Disgorgement several during the year
Notes: Same blend as the Ultradition Brut, but held one year longer en-tirage before disgorgement, and is dosed at 4.5 gr/l. The label is a replica of an original label used by the family in the early days of estate bottling. It is a bit racier and taughter than the regular Brut, and would make a fine aperitif as well, or even paired with oysters or shellfish.
