From 72 year old vines planted to 32ha of limestone and clay soils, the grapes are handpicked and hand-sorted into small cagettes, then de-stemmed in early September before being pressed into a tank. Spontaneous fermentation takes place in both cement and stainless steel with native yeasts, lasting four weeks, under temperature-controlled conditions. The wine does spend one month on lees without stirring. Aged for five months and filtered lightly using bentonite.
