After training at some of the best Champagne houses, Hoch returned to his native Kremstal, with its Champagne-like chalky soils, and applied his newfound knowledge to pet-nat. His vinification methods sound like a mad experiment—Zweigelt pressed as a white wine, skin-fermented Sauvignon Blanc—but the results are delicious. This crisp and dry frizzante exhibits great minerality and the pucker of citrus fruit.
