This is a family-run winery in Alsace that's been around for 200 years and 11 generations! The farming is entirely organic and biodynamic with the goal of harvesting the highest quality fruit possible. Not only permitting but actually encouraging the local wildlife to make a home surrounding the farm, the family knows a thriving ecosystem only benefits the health of the vineyards. In the cellar, intervention is minimal and winemaking takes its time as there is no rush to make a wine of true quality. Les Collines translates to “The Hills” a nod to the rolling vineyards of this Edelzwicker’s origin. Edelzwicker is the traditional Alsatian field blend of regional grapes. Powerful and aromatic, these field blends pair perfectly with the local fare. This biodynamically farmed cuvee is fermented with 30% on lees. Aged in foudre for 8-12 months.
